To make this dish, I started by placing a corned beef brisket fat side up in my slow cooker.

Then I removed the beef brisket from the Crock Pot and allowed it to rest for fifteen minutes.

Then the corned beef was ready to slice.

  • 2 tablespoons Italian seasoning
  • 4 cups beef broth
  • 2 cups carrots, peeled washed, and sliced

  1. Place corned beef brisket fat side up into a 6-8 quart crock pot and sprinkle with provided seasoning packet.
  2. Mix garlic and Italian seasoning with the beef broth and pour around the brisket until it is almost covered.
  3. Cook on low for 5 hours and then quickly add the red potatoes, carrots, and onion. Don’t leave the top open for too long or you will lose too much heat in the crockpot.
  4. Continue cooking on low for another 3 to 5 hours (8-10 hours total).
  5. Once cooked, remove the brisket from the crock pot and let it sit for 15 minutes before slicing it, to allow the meat to rest.
  6. Garnish with parsley and serve warm with potatoes, onions, and carrots.
