To make this slow cooker meatloaf with onion soup mix, I started by dumping some ketchup and Sweet Baby Ray’s Hickory and Brown Sugar barbecue sauce into a medium mixing bowl.
I stirred the sauces together well and set the bowl aside.
Then I dumped two pounds of lean ground beef into a large mixing bowl.
I placed 30 Ritz crackers into a large Ziploc bag.
I used a rolling pin to crush the Ritz crackers.
Then I poured the cracker crumbs into the bowl with the ground beef.
I also added some Lipton onion soup mix to the bowl.
Then I added two eggs, salt and pepper to the bowl.
I also added 1/2 cup of the prepared ketchup and barbecue sauce mixture to the bowl.
Then I used my hands to combine all of the ingredients together well.
I lined my crock pot with aluminum foil and then sprayed the foil with cooking spray.
I scooped the meat mixture into the foil lined crock pot and used my hands to shape it into the form of a loaf.
Then I spooned the remaining ketchup and barbecue sauce mixture onto the meatloaf and spread it out evenly.
I placed the lid on the crock pot and left the meatloaf to cook on HIGH for 3 hours.
After 3 hours I used a meat thermometer to make sure the meatloaf had reach an internal temperature of 160F.
Then I used the foil to lift the meatloaf from the crock pot and placed it on a baking sheet.
I spooned the sauce that had dripped down onto the foil bake on top of the meatloaf and spread it back out evenly.
Then I placed the baking sheet in the oven under the broiler until the glaze on the meatloaf was bubbling.
I removed the baking sheet from the oven and allowed the meatloaf to sit for a few minutes before slicing and serving.
This hearty meatloaf is a delicious comfort food.
