To make this salad, I started by preparing the dressing.

I poured some balsamic vinegar, Dijon mustard, honey and fresh oregano into a small bowl.

I poured in some olive oil while continuously whisking.

I also added some salt and pepper.

I whisked well again and then placed the dressing in the refrigerator.

I cooked some orzo pasta according to the directions on the package.

I drained the pasta, rinsed it well with cold water and then tossed it with some olive oil and set it aside to finish cooling.

Once the pasta was completely cooled, I transferred it to a large bowl.

I added some sun dried tomatoes to the bowl.

Then I added some sliced Kalamata olives.

I also added some diced red onions.

I added some crumbled Feta cheese and fresh oregano.

I added the dressing to the bowl and tossed all of the ingredients together well.

I placed the bowl in the refrigerator and left the salad to chill for an hour before serving.

After an hour I removed the salad from the refrigerator.

I tossed the salad well one last time.

Ingredients You’ll Need to Make This Mediterranean Orzo Pasta Salad:

Dressing

  • ¼ cup of balsamic vinegar
  • ½ tablespoon Dijon mustard
  • ½ tablespoon honey
  • 1 tablespoon fresh oregano, finely chopped
  • ½ cup extra virgin olive oil
  • Salt and pepper, to taste

Salad

  • 1 (16 ounce) box orzo pasta
  • ½ tablespoon olive oil
  • 1 cup sun-dried tomatoes, finely sliced
  • 1 cup red onion, diced
  • 1 cup Kalamata olives, sliced
  • 1 cup feta crumbles
  • 2 tablespoons fresh oregano, roughly chopped
  • Salt and pepper to taste

How to Make Mediterranean Orzo Pasta Salad:

  1. Combine balsamic vinegar, mustard, honey and fresh oregano in a small bowl.
  2. Slowly pour in the olive oil while continuously whisking.
  3. Once oil is added, season with salt and pepper and whisk for an additional 30 seconds to a minute.
  4. Set dressing aside in the refrigerator while the salad is prepared.
  5. Prepare the orzo according to the directions on the package.
  6. Drain and rinse the pasta well with cold water.
  7. Toss the cooked pasta with ½ tablespoon of olive oil and set aside to finish cooling
  8. Once the pasta is completely cold, transfer it to a large bowl.
  9. Add sun-dried tomatoes, red onion, olives, feta and oregano to the completely cooled pasta and toss to combine.
  10. Add dressing to pasta and toss to combine.
  11. Season salad with salt and pepper.
  12. Place dressed salad in the refrigerator for at least one hour before serving.
  13. Toss salad one more time before serving.

  • Do not skip the step of tossing the cooked orzo in oil. This helps prevent the pasta from sticking to itself as it cools.
