Ingredients You’ll Need for Reuben Casserole
- 6 cups rye bread, sliced into 1-inch cubes (I used marble rye bread)
- 1/4 cup melted butter
- 1/2 teaspoon garlic powder
- 1 pound cooked corned beef, sliced or chopped (I used deli sliced)
- 1 (16-ounce) jar sauerkraut, drained and rinsed
- 1/2 cup chopped dill pickles
- 1/4 cup chopped fresh parsley
- Salt and pepper, to taste
- 1 cup Thousand Island dressing
- 6 slices Swiss cheese

Step by Step Instructions for Making Reuben Casserole
STEP 1:
To make this casserole I started by chopping some marble rye bread into 1 inch cubes.
I placed the cubes of bread in a large mixing bowl.
STEP 2:
I melted some butter in a small bowl.
I added some garlic powder to the bowl and stirred well.
I poured the butter mixture over the bread cubes and tossed until they were all coated.
STEP 3:
I greased a 9 x 13 inch baking dish well with cooking spray.
I placed half of the bread cubes in the bottom of the baking dish and spread them out evenly.
STEP 4:
I placed some deli sliced corned beef on top of the bread cubes.
I layered some sauerkraut over the corned beef.
STEP 5:
I sprinkled some chopped dill pickles over the sauerkraut.
Then I sprinkled some chopped fresh parsley and salt and pepper on top.
STEP 6:
I drizzled some Thousand Island dressing over the the ingredients in the baking dish.
I placed slices of Swiss cheese on top.
STEP 7:
Then I sprinkled the remaining bread cubes over the Swiss cheese.
STEP 8:
I placed the dish in the oven and baked the casserole until the cubes of bread were golden brown and the cheese was melted
I removed the casserole from the oven and allowed it to rest for a few minutes.
Then the Reuben casserole was ready to slice.
This simple layered casserole is perfect for weeknights.

- 1 (16-ounce) jar sauerkraut, drained and rinsed
- 1/2 cup chopped dill pickles
- 1/4 cup chopped fresh parsley

Instructions
- Preheat your oven to 350°F and lightly grease a 9x13-inch baking dish with cooking spray.
- Add the bread cubes into a large bowl.
- In a separate small bowl, mix the melted butter and garlic powder. Evenly pour the butter mixture over the bread cubes and mix until lightly coated (they shouldn’t be too wet or they’ll get soggy).
- Layer half of the rye bread cubes in the bottom of the prepared baking dish.

I made a Reuben casserole years ago. I went to make it again and couldn’t find the recipe book it was in so I searched Pinterest and found this recipe. I am so glad I couldn’t find the recipe I previously used because this one is AMAZING and is the best Reuben casserole I’ve ever had. The pickles were a great addition.
