To make this cheesy dip, I started by removing 1lb of mild Italian sausage from the casings and dropping the meat into a large non stick skillet over medium-high heat.
I crumbled the sausage meat well as it cooked.
Once the sausage meat was nicely browned, I added an undrained can of Rotel to the skillet.
I also added some Velveeta cheese.
I stirred until the cheese was completely melted and then reduced the heat to low.
I added a packet of taco seasoning and some chopped green onions to the skillet.
I stirred well.
Then the dip was ready to serve.
I served my Rotel dip with some tortilla chips.
You could also serve this dip with crackers, veggies and assorted breads.
