To make this chicken pot pie soup, I started by dropping some butter into a soup pot over medium heat.
Once the butter was melted, I added some diced onions to the pot.
I stirred well and cooked the onions until they were translucent.
Then I added some all purpose flour to the pot.
I stirred well and cooked the flour for a couple of minutes until it started to brown slightly.
Then I added some chicken broth to the pot.
I whisked well.
Then I added some milk, salt, pepper, garlic powder and onion powder to the pot.
I whisked well again.
I brought the liquid to a boil.
Then I reduced the heat to medium-low and left the soup to simmer and thicken for ten minutes.
After ten minutes, I added some frozen diced hash brown potatoes, frozen mixed vegetables and shredded rotisserie chicken to the pot.
I stirred well and left the soup to continuing simmering for fifteen minutes.
I removed the pot from the heat.
Then the chicken pot pie soup was ready to serve.
I served my soup with some freshly baked Pillsbury flaky rolls.
