To make this soup, I started by spraying the inside of my Crock Pot well with cooking spray.
I added some diced onions to the pot.
Then I added some finely chopped broccoli florets to the pot.
I also added some matchstick carrots to the pot.
I dumped some cheddar soup into a large mixing bowl.
I added some chicken broth to the bowl.
I also added some cornstarch to the bowl.
I added some Italian seasoning, salt and pepper to the bowl.
I whisked all of the ingredient together well.
Then I poured the mixture over the ingredients in the Crock Pot.
I stirred all of the ingredients in the Crock Pot together.
Then I placed the lid on the Crock Pot and set it to cook on LOW for 3 hours.
After 3 hours I removed the lid from the pot.
I stirred well and increased the heat to HIGH.
I added some heavy cream to the pot.
I stirred well again and returned the lid to the pot.
I left the soup to continue cooking on HIGH for 1 hour.
After 1 hour I removed the lid again.
I stirred the contents well.
Then I added some shredded cheddar and shredded parmesan to the pot.
I stirred until the cheese was melted.
Then the slow cooker broccoli cheddar soup was ready to serve.
I scooped the broccoli cheese soup into bowls.
I sprinkled some additional shredded cheddar on top while serving.
