To make this baked potato salad, I started by washing three pounds of russet potatoes.
I chopped the potatoes into ¼ inch chunks.
Then I dumped the chunks into a large pot.
I added cold water to the pot until the water was one inch higher than the potatoes.
Then I added some salt to the pot and brought the water to a boil.
I boiled the potatoes until they were tender.
Then I drained the potatoes and set them aside to cool.
I dumped some mayo and sour cream into a large mixing bowl.
Then I added some salt, pepper, garlic powder and onion powder to the bowl.
I stirred all of the ingredients together well.
Once the cooked potatoes were only slightly warm, I added them to the bowl with the mayo and sour cream mixture.
I stirred until all of the potatoes were coated in the mixture.
Then I added some crumbled bacon, shredded cheddar cheese and chopped green onions to the bowl.
I stirred until all of the ingredients were fully combined.
Then I covered the bowl and placed it in the refrigerator.
I left the salad to chill in the refrigerator for two hours before serving.
I sprinkled some more crumbled bacon, shredded cheese and chopped green onions on top of the salad before serving.
