To make this dish, I started by cooking some bowtie pasta noodles according to the directions on the package and then draining them.
While the pasta was cooking I heated some olive oil in a skillet over medium-high heat.
I cut some boneless, skinless chicken breasts into one inch chunks.
I dropped the chicken breast chunks into the heat skillet and seasoned them with salt and pepper.
I cooked the chicken breast chunks until they were nicely browned on both sides.
Then I added some diced onions and diced bell peppers to the skillet.
I stirred the chicken, onions and peppers together well.
Then I added some garlic puree, smoked paprika, salt and pepper to the skillet.
I stirred all of the ingredients together well and left them to continue cooking for a few minutes.
Then I added some chipotle pepper sauce and chicken broth to the skillet and stirred again.
I also added some heavy cream and lime juice to the skillet.
I stirred well and brought the liquid to a boil.
Once the liquid was boiling, I reduced the heat to medium and left the sauce to simmer, stirring occasionally, for 10 minutes.
After ten minutes, I added the cooked noodles to the skillet.
I stirred until all of the noodles were coated in sauce.
I added some grated parmesan cheese to the pot.
I stirred well and left the pasta to simmer for a few more minutes.
Then I removed the pan from the heat and added some chopped parsley.
I stirred the parsley into the pasta.
Then the chicken chipotle pasta was ready to serve.
I served my pasta with some parmesan cheese and crispy tortilla strips sprinkled on top.
