To make this pasta dish, I started by cutting a pound of mixed colour cherry tomatoes in half.

I dumped the halved cherry tomatoes into a large mixing bowl.

I diced some yellow onions and added them to the bowl.

I also added some freshly chopped basil and parsley to the bowl.

Then I added some garlic puree, Italian seasoning, salt, pepper and olive oil to the bowl.

I stirred all of the ingredients together well.

Then I set the bowl aside to allow the ingredients to marinate while I cooked the pasta.

I cooked some linguine noodles according to the directions on the package.

Then I drained the noodles.

I dumped the cooked linguine noodles into a large skillet over medium-low heat.

I added the tomato mixture to the pan.

I stirred until all of the noodles were coated in the olive oil mixture.

I left the pasta to cook for about five minutes, stirring occasionally.

Then I removed the pan from the heat.

Ingredients You’ll Need to Make This Linguine Positano:

  • 1 lb mixed colour cherry tomatoes
  • 1/4 cup finely diced, yellow onion
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley
  • 1 tbsp garlic puree
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp pepper

  • 12 oz linguine, uncooked

  1. Slice the cherry tomatoes in half and dump them into a large mixing bowl.
  2. Add the diced onion, chopped basil, chopped parsley, garlic puree, Italian seasoning, salt, pepper and olive oil to the bowl.
  3. Stir all of the ingredients together well.
  4. Set the bowl aside to allow the ingredients to marinate while you cook the pasta.
  5. Cook the linguine according to the directions on the package, then drain.
  6. Return the linguine to the empty cooking pot over medium-low heat or use a large skillet if you prefer.
  7. Add the tomato mixture to the pasta.
  8. Stir until all of the noodles are well coated in the tomato and olive oil mixture.
  9. Continue cooking the pasta, stirring occasionally for 5 minutes.
  10. Remove the pan from the heat.
  11. Serve and enjoy!
