To make this stuffed pepper soup, I started by dumping some ground beef into a large pot over medium-high heat.

I added some oil and diced green bell pepper to the pot.

I stirred well and cooked until the onions had softened.

Then I added some minced garlic to the pot.

I stirred well and continued cooking until the garlic browned slightly.

I added the cooked ground beef to the pot.

I also added some diced tomatoes and tomato sauce to the pot.

Then I added some beef broth to the pot.

I also added some Italian seasoning, salt and pepper to the pot.

I stirred well and brought the soup to a simmer.

Then I put a lid on the pot and left it to cook for thirty minutes.

After thirty minutes I added some cooked white rice to the soup.

I stirred well.

  • 1 pound ground beef
  • 1 teaspoon olive oil
  • 2 green bell pepper, diced
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 29 oz canned diced tomatoes
  • 15 oz canned tomato sauce
  • 32 oz beef broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 cup white rice, cooked to produce about 3 cups of rice

  3. Add the oil, bell pepper, and onion to the pot and saute until the onions have softened.
  4. Add the garlic to the pot and cook until the garlic gets a little bit of color.
  5. Transfer the meat back into the pot. Pour in the diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, and pepper.
  6. Bring it up to a simmer and cover; allow it to cook for 30 minutes
  7. Stir the cooked rice into the soup.
  8. Serve and enjoy!
