To make this stuffed pepper soup, I started by dumping some ground beef into a large pot over medium-high heat.
I crumbled the ground beef well as it cooked.
Once the ground beef was fully cooked I transferred it to a paper towel lined plate.
I added some oil and diced green bell pepper to the pot.
I also added some diced onions to the pot.
I stirred well and cooked until the onions had softened.
Then I added some minced garlic to the pot.
I stirred well and continued cooking until the garlic browned slightly.
I added the cooked ground beef to the pot.
I also added some diced tomatoes and tomato sauce to the pot.
Then I added some beef broth to the pot.
I also added some Italian seasoning, salt and pepper to the pot.
I stirred well and brought the soup to a simmer.
Then I put a lid on the pot and left it to cook for thirty minutes.
After thirty minutes I added some cooked white rice to the soup.
I stirred well.
Then the stuffed pepper soup was ready to serve.
The rice and ground beef make this a very filling broth based soup.
