To make these Instant Pot chicken tacos, I started by setting my Instant Pot to Saute Normal.
I added some olive oil and garlic puree to the pot.
I added some diced onions to the pot.
I stirred all of the ingredients together well.
I cooked the onions until they were just starting to brown.
Then I turned the Instant Pot off and added some chicken broth to the pot.
I stirred well and scraped the bottom of the pot to make sure no bits of onion were sticking to the bottom.
Then I added some boneless, skinless chicken breasts in a single layer to the pot.
I sprinkled a packet of taco seasoning on top of the chicken.
Then I spooned some chunky salsa over the chicken.
I placed the lid on the Instant Pot, turned the steam release handle to the sealing position and set the Instant Pot to pressure cook on High for fifteen minutes.
Once the Instant Pot was done pressure cooking, I left it to natural release for ten minutes.
After ten minutes of natural release, I turned the steam release handle to the venting position to finish releasing the pressure.
Then I removed the lid from the pot and used tongs to transfer the chicken breasts to the cutting board.
I used two forks to shred the chicken breasts.
Then I returned the shredded chicken to the Instant Pot.
I stirred until all of the shredded chicken was well coated in the sauce in the pot.
I left the chicken to soak up the sauce for five minutes before serving.
I used hard shells for my tacos but soft shells would work great too.
