To make these taco stuffed shells, I started by cooking some jumbo pasta shells according to the directions on the package.
While the shells were cooking, I dumped some lean ground beef into a large non stick skillet over medium-high heat.
I crumbled the ground beef well as it cooked.
Once the ground beef was fully cooked, I drained the grease from the pan.
I added some salsa, Rotel and taco seasoning to the skillet.
I stirred until all of the ingredients were fully combined.
I removed the pan from the heat and added some shredded Mexican cheese blend to the skillet.
I stirred until the cheese was melted.
I sprayed a 9 x 13 inch baking dish well with cooking spray.
I scooped the ground beef mixture into the cooked pasta shells and placed them in a single layer in the baking dish.
Then I sprinkled some shredded cheese on top of the shells.
I also spooned some salsa over the shells.
Then I placed the dish in the oven and baked the pasta shells until the filling was bubbling.
I removed the dish from the oven.
I scooped and served the pasta shells right away.
I topped my taco shells with sour cream and chopped green onions.
These cheesy hamburger pasta shells have a bit of a kick.

- Preheat oven to 400F.
- Cook the pasta shells according to the directions on the package.
- While the pasta shells are cooking, dump the ground beef into a large non stick skillet over medium-high heat.
- Crumble the ground beef well as it cooks.
- Once the ground beef is fully cooked, drain the grease from the pan.
- Add 1 cup of the salsa to the skillet.
- Add the Rotel and taco seasoning to the skillet.
- Stir until all of the ingredients are fully combined.
- Remove the skillet from the heat and add 2 cups of the cheese to the skillet.
- Stir until the cheese is melted.
- Spray a 9 x 13 inch baking dish with cooking spray.
- Scoop the ground beef mixture into the cooked pasta shells and then place them in a single layer in the baking dish.
- Sprinkle the remaining 1/2 cup of shredded cheese on top.
- Spoon the remaining 1/4 cup of salsa over the top.
- Place the dish in the oven and bake until the filling is bubbling. 22 – 25 minutes.
- Remove the dish from the oven.
- Scoop and serve the taco shells.
- Top with sour cream and chopped green onions if desired.
