To make these taco stuffed shells, I started by cooking some jumbo pasta shells according to the directions on the package.

While the shells were cooking, I dumped some lean ground beef into a large non stick skillet over medium-high heat.

I crumbled the ground beef well as it cooked.

Once the ground beef was fully cooked, I drained the grease from the pan.

I added some salsa, Rotel and taco seasoning to the skillet.

I stirred until all of the ingredients were fully combined.

I removed the pan from the heat and added some shredded Mexican cheese blend to the skillet.

I stirred until the cheese was melted.

I sprayed a 9 x 13 inch baking dish well with cooking spray.

I scooped the ground beef mixture into the cooked pasta shells and placed them in a single layer in the baking dish.

Then I sprinkled some shredded cheese on top of the shells.

I also spooned some salsa over the shells.

Then I placed the dish in the oven and baked the pasta shells until the filling was bubbling.

I removed the dish from the oven.

Ingredients You’ll Need to Make These Taco Stuffed Shells:

  • 12 oz jumbo pasta shells
  • 1 lb lean ground beef
  • 1 1/4 cups chunky salsa
  • 10 oz Rotel diced tomatoes and green chilies
  • 1 oz taco seasoning
  • 2 1/2 cups shredded Mexican cheese blend

Optional Garnish

  • sour cream
  • chopped green onions

How to Make Taco Stuffed Shells:

  1. Preheat oven to 400F.
  2. Cook the pasta shells according to the directions on the package.
  3. While the pasta shells are cooking, dump the ground beef into a large non stick skillet over medium-high heat.
  4. Crumble the ground beef well as it cooks.
  5. Once the ground beef is fully cooked, drain the grease from the pan.
  6. Add 1 cup of the salsa to the skillet.
  7. Add the Rotel and taco seasoning to the skillet.
  8. Stir until all of the ingredients are fully combined.
  9. Remove the skillet from the heat and add 2 cups of the cheese to the skillet.
  10. Stir until the cheese is melted.
  11. Spray a 9 x 13 inch baking dish with cooking spray.
  12. Scoop the ground beef mixture into the cooked pasta shells and then place them in a single layer in the baking dish.
  13. Sprinkle the remaining 1/2 cup of shredded cheese on top.
  14. Spoon the remaining 1/4 cup of salsa over the top.
  15. Place the dish in the oven and bake until the filling is bubbling. 22 – 25 minutes.
  16. Remove the dish from the oven.
  17. Scoop and serve the taco shells.
  18. Top with sour cream and chopped green onions if desired.
