To make these sloppy joes, I started by dumping a pound of ground chicken into a large saute pan over medium-high heat.
I crumbled the ground chicken well as it cooked.
Once the ground chicken was fully cooked, I added some canned corn and diced red onions to the pan.
I stirred well and continued cooking for a few minutes.
Then I added some condensed cream of chicken soup, Cajun seasoning, onion powder, salt and pepper to the pan.
I stirred until all of the ingredients were fully combined and then reduced the heat to low.
I added some mayo the pan.
I stirred just until the mayo was combined with the rest of the mixture.
I left the pan to sit over low heat while I toasted the buns.
I lay four hamburger buns in a single layer on a baking sheet.
Then I placed the baking sheet in the preheated oven and toasted the buns for five minutes.
After five minutes I removed the pan from the oven and scooped the ground chicken mixture onto the bottom buns.
I sprinkled some shredded mozzarella and cheddar cheese on top of the chicken mixture.
Then I placed the top buns on the sandwiches.

- Leave the pan to sit over medium heat.
- Place the hamburger buns in a single layer on a baking sheet.
- Place the baking sheet in the oven and toast the buns until lightly browned. 4-5 minutes.
