To make this casserole, I started by dumping some softened cream cheese into a large mixing bowl.
I added some condensed cream of chicken soup and cheddar soup to the bowl.
I stirred all of the ingredients together until they were fully combined.
Then I added some corn and black bean salsa and taco seasoning to the bowl.
I stirred well again.
I added some shredded rotisserie chicken, diced red bell peppers and chopped green onions to the bowl.
I also added some shredded Mexican cheese blend to the bowl.
I stirred until all of the ingredients were fully combined.
I sprayed a 9 x 13 inch baking dish with cooking spray.
Then I poured the chicken mixture into the baking dish and spread it out evenly.
I placed the baking dish in the oven and baked the casserole for thirty minutes.
After thirty minutes I removed the dish from the oven.
I sprinkled some crumbled tortilla chips on top.
Then I sprinkled some shredded Mexican cheese blend on top of the tortilla chips.
I sprinkled some diced red bell peppers and chopped green onions on top of the cheese.
I returned the dish to the oven and continued baking the casserole until the cheese was fully melted.
I removed the casserole from the oven and let it rest for a few minutes.
Then I scooped and served the casserole.
