To make these disco fries, I started by placing some frozen crinkle cut French fries in a single layer on a parchment lined baking sheet.

I place the baking sheet in the oven and baked the fries until they were golden brown and crispy.

While the fries were cooking, I prepared the gravy.

I added some butter to a large saucepan over medium heat.

Once the butter was completely melted I added some minced shallot to the pan.

I also added some garlic puree to the pan.

I stirred the shallots and garlic together well.

I continued cooking the shallots for a few minutes.

Then I added some all purpose flour to the pan.

I stirred all of the ingredients together well.

I cooked the flour mixture, stirring frequently, until it started to brown slightly.

Then I added some beef broth to the pan.

I whisked well.

I added some Worcestershire sauce to the pan and whisked well again.

Then I brought the gravy to a boil.

I left the gravy to boil and thicken or a few minutes.

Then I reduced the heat to low.

When the French fries were golden brown, I removed the baking sheet from the oven.

Then I sprinkled some shredded mozzarella and cheddar cheese on top of the fries.

I returned the baking sheet to the oven for a couple of minutes just to melt the cheese.

Then I poured the gravy over the fries.

I sprinkled some chopped chives on top.

Ingredients You’ll Need to Make These Disco Fries:

  • 32 oz frozen French fries
  • 1/4 cup salted butter
  • 1 shallot, minced
  • 1/2 tsp garlic puree
  • 1/4 cup all purpose flour
  • 2 1/2 cups beef broth
  • 2 tsp Worcestershire sauce
  • 2 cups shredded mozzarella and cheddar cheese blend
  • 1/2 tbsp chopped chives

How to Make Disco Fries:

  1. Preheat oven to 425F.
  2. Place the French fries in a single layer on a parchment lined baking sheet.
  3. Place the baking sheet in the oven and bake the fries according to the directions on the package until golden brown.
  4. While the fries are cooking, start preparing the gravy.
  5. Dump the butter into a large saucepan over medium heat.
  6. Once the butter is fully melted, add the shallots and garlic puree to the pan.
  7. Stir well and continue cooking for 4 minutes.
  8. Add the flour to the pan and stir well.
  9. Continue cooking the flour mixture until it starts to brown slightly.
  10. Then add the beef broth to the pan and whisk well.
  11. Add the Worcestershire sauce to the pan and whisk well again.
  12. Bring the gravy to a boil.
  13. Let the gravy continue to boil and thicken for a 3-4 minutes.
  14. Whisk well and reduce the heat to low.
  15. When the fries are golden brown, remove them from the oven.
  16. Sprinkle the shredded cheese on top of the fries.
  17. Return the baking sheet to the oven for a couple minutes just to melt the cheese.
  18. Remove the baking sheet from the oven and pour the gravy over the fries.
  19. Sprinkle the chives on top.
  20. Serve and enjoy!
