To make this manicotti pasta, I started by cooking the manicotti shells in boiling water for 7 minutes.
Then I drained the noodles and rinsed them well with cold water until they were cooled down.
While the pasta was cooking, I started preparing the filling.
I dumped some ricotta cheese and sour cream into a large mixing bowl.
I added an egg and some Italian seasoning, salt and pepper to the bowl.
I stirred all of the ingredients together until they were fully combined.
Then I added some shredded mozzarella cheese and shredded parmesan cheese to the bowl.
I stirred well again.
I sprayed a 9 x 13 inch baking dish well with cooking spray.
Then I poured some Bolognese sauce into the bottom of the dish and spread it out evenly.
I scooped the ricotta mixture into a large Ziploc bag.
Then I cut one corner of the bag and squeezed the filling into the cooked manicotti shells.
I set the filled shells on top of the Bolognese sauce in the baking dish.
Then I spooned some more Bolognese sauce on top of the manicotti.
I sprinkled some shredded mozzarella cheese on top.
Then I placed the dish in the oven and baked the pasta until the cheese on top was fully melted and just starting to brown around the edges.
I removed the dish from the oven and allowed the pasta to sit for a few minutes before serving.
I sprinkled some chopped parsley on top right before serving.

- Spoon the remaining cup of Bolognese sauce over the manicotti.
- Sprinkle the remaining cup of shredded mozzarella on top.
- Place the dish in the oven and bake until the cheese on top is completely melted and starting to brown around the edges. 30 – 35 minutes.
- Remove the dish from the oven and allow the pasta to sit for a few minutes before serving.
- Sprinkle with chopped parsley if desired.
