To make this mint fudge, I started by lining an 8-inch square baking dish with parchment paper.
Then I dumped some milk chocolate chips into a medium microwave safe bowl.
I poured some sweetened condensed milk on top of the chocolate chips.
Then I placed the bowl in the microwave and heated the ingredients on High for one minute.
I removed the bowl from the microwave and stirred until all of the chocolate chips were melted.
Then I dumped the chocolate mixture into the parchment lined baking dish and spread it out evenly.
I placed the baking dish in the fridge and left it to sit for half an hour so that the first layer could set.
After half an hour I removed the dish from the fridge.
Then I dumped some white chocolate chips into a medium microwave safe bowl.
I poured some sweetened condensed milk on top of the white chocolate chips.
Then I placed the bowl in the microwave and heated the ingredients of High for one minute.
I removed the bowl from the microwave and poured in some green food colouring and mint extract.
I stirred until the chocolate chips were melted and the food colouring was evenly distributed.
Then I poured the mixture on top of the milk chocolate layer in the baking dish and spread it out evenly.
I returned the dish to the fridge and left the fudge to set for another hour and a half.
After the fudge had set, I removed the dish from the refrigerator.
Then I used the parchment paper to lift the fudge out of the baking dish.
I sliced the fudge into 36 pieces.

- Once the fudge is set, use the parchment paper to lift it out of the dish.
