To make these cookies, I started by dumping some smooth peanut butter into a large mixing bowl.
Then I added some light brown sugar to the bowl.
I also added an egg, some salt and vanilla extract to the bowl.
I used an electric mixer to cream all of the ingredients together until smooth.
Then I added some all purpose flour to the bowl.
I continued mixing with the electric mixer until a sticky dough formed.
Then I added some semi sweet chocolate chips to the bowl.
I used a rubber spatula to stir the chocolate chips into the cookie dough.
Then I rolled the dough into balls approximately one inch in diameter.
I placed the cookie dough balls on a parchment lined baking sheet, leaving about two inches between them.
Then I used a fork to flatten the balls.
I pressed down on the balls a second time at a 90 degree angle to make a criss-cross pattern.
Then I placed the baking sheet in the oven and baked the cookies until they were just starting to brown slightly around the bottom edges.
I removed the pan from the oven and left the cookies to cool on the pan for 5 minutes.
After 5 minutes, I transferred the cookies to wire racks to finish cooling.
Then the chewy peanut butter cookies were ready to serve.
