To make these cookie bars, I started by dumping some peanut butter into a large mixing bowl along with some softened butter, brown sugar and white sugar.
I used an electric mixer to cream the ingredients together until smooth.
Then I added some eggs and vanilla and continued mixing with the electric mixer.
I added some all-purpose flour, baking powder and salt to the bowl and continued mixing.
Then I added some mini marshmallows and Skor bits to the bowl.
I used a rubber spatula to stir the marshmallows and Skor bits into the cookie dough.
Then I dumped the cookie dough onto a greased 10 x 15 inch cookie dough sheet and spread it out evenly.
I baked the peanut butter cookie bars until they were just starting to brown across the top.
I allowed the them to cool slightly before slicing them.
The marshmallows melt into the cookie dough as it bakes making these peanut cookie bars extra soft and chewy.

- 1/2 cup smooth peanut butter
- 1/2 cup salted butter, softened
- 3/4 cup golden brown sugar
- 1/4 cup granulated sugar
- 2 eggs, large
- 1 tsp vanilla extract
- 1 1/4 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 3 cups mini marshmallows
- 1 cup Skor bits
Instructions:
- Preheat oven to 350F.
- In a large mixing bowl combine peanut butter, softened butter, brown sugar and granulated sugar using an electric mixer until smooth.
- Add the eggs and vanilla and continue mixing.
- Then add in the flour, baking powder and salt. Use the electric mixer starting on low speed to mix the dry ingredients into the dough.
- Add the marshmallows and Skor bits to the bowl and use a rubber spatula to stir them into the cookie dough.
- Pour the mixture out onto a greased 10 x 15 inch cookie sheet and spread it out evenly.
- Place the cookie sheet in the oven and bake until the top of the cookie is just starting to brown. 18-20 minutes.
- Remove from oven and allow to cool slightly before slicing and serving.
