To make this taco pie, I started by pricking a store bought pie crust with a fork.

Then I added an undrained can of Rotel to the skillet.

I also added a packet of taco seasoning to the skillet.

I stirred all of the ingredients together well.

I continued cooking the mixture until no liquid remained in the bottom of the skillet.

I scooped the ground beef mixture into the prepared pie crust.

Then I cracked two eggs into a small bowl.

I used a fork to beat the eggs well.

I poured the beaten eggs over the ground beef mixture in the pie crust.

I stirred the ground beef mixture up slightly so that the egg could sink down throughout the filling mixture.

Then I sprinkled some shredded Mexican cheese blend on top of the pie.

I placed the pie in the oven and baked it until the cheese on top was fully melted and starting to brown.

Then I removed the pie from the oven.

  10. Crack the eggs into a small bowl and beat well with a fork.
  11. Pour the eggs over the ground beef mixture in the pie crust.
  12. Stir up the ground beef mixture slightly to allow the egg to sink down throughout the filling mixture.
  13. Sprinkle the shredded cheese on top.
  14. Place the pie in the oven and bake until the cheese is completely melted and starting to brown. 13 – 15 minutes.
  15. Remove the pie from the oven.
  16. Sprinkle the shredded lettuce on top of the pie.
  17. Sprinkle the diced tomatoes on top of the lettuce.
