To make these air fryer potato wedges, I started by rinsing 2 medium sized russet potatoes.

Then I sliced the potatoes in half lengthwise.

I cut each potato half into four wedges.

Then I placed all of the potato wedges into a large bowl filled with cold water.

I left the potato wedges to soak for 30 minutes.

After 30 minutes I drained the potatoes and patted them dry with paper towel.

Then I transferred the potatoes to a large mixing bowl.

I added some olive oil, Italian seasoning, salt and pepper to the bowl.

I tossed the potato wedges until they were all well coated in the olive oil and seasoning.

Then I placed the potato wedges in a single layer in the basket of my preheated air fryer.

I cooked the potatoes at 400F for 18 minutes, tossing them well every 6 minutes so that they would be evenly cooked on all sides.

Then the tasty wedge potatoes were ready to serve.
