To make this casserole, I started by dropping some chopped bacon into a large skillet over medium-high heat.
I stirred and cooked the bacon until it was brown and crispy.
I used a slotted spoon to transfer the cooked bacon pieces to a paper towel lined plate.
I added some lean ground beef to the skillet still over medium-high heat.
I crumbled the ground beef well as it cooked.
Once the ground beef was fully cooked, I drained the grease from the pan.
I added some minced garlic to the skillet.
I stirred and continued cooking for a couple minutes.
Then I removed the skillet from the heat.
I added some instant rice to the skillet.
I stirred the rice and ground beef together.
Then I added some condensed cheddar cheese soup to the skillet.
I added some milk and a packet of ranch dressing mix.
I stirred all of the ingredients together well.
Then I added some shredded Mexican cheese blend, chopped green onions and approximately two thirds of the cooked bacon pieces to the skillet.
I stirred until all of the ingredients were well combined.
I sprayed a 9 x 13 inch baking dish well with cooking spray.
I poured the mixture into the baking dish and spread it out evenly.
I covered the baking dish with aluminum foil.
I placed the dish in the oven and baked the casserole, covered, for forty minutes.
After forty minutes, I removed the dish from the oven and removed the foil.
I sprinkled some shredded Mexican cheese blend on top.
I also sprinkled the remaining cooked bacon pieces on top.
I returned the dish to the oven and continued baking until the casserole was bubbling and the cheese on top was completely melted.
I removed the dish from the oven and allowed the casserole to rest for a few minutes.
I sprinkled some chopped green onions on top.
