To make this casserole, I started by cooking some rotini according to the directions on the package.

In the last two minutes of cooking time I added some broccoli florets to the boiling water with the pasta.

Then I dumped them into the bottom of a 9 x 13 inch baking dish.

I heated some oil in a saucepan over medium-high heat.

Once the oil was hot I added some minced garlic and diced red onions to the pan.

I cooked them until the onion had softened.

I added some flour to the pan and stirred for about two minutes.

 

I added some milk and stirred well.

I brought the mixture to a boil and then reduced the heat.

I continued stirring until the mixture had thickened nicely.

I added some cubed cream cheese, salt and pepper to the pan.

I continued cooking until the cream cheese was melted.

I added some cooked shredded chicken to the pan.

I stirred until all of the chicken was coated in the sauce.

I poured the sauce mixture on top of the pasta and broccoli in the baking dish.

I stirred all of the ingredients in the baking dish together until well combined.

I sprinkled some shredded cheddar cheese on top.

I baked the casserole for 15 minutes.

I turned the broiler on for the last few minutes to brown the cheese.

Ingredients You’ll Need to Make This Chicken Broccoli Casserole:

  • 12 oz of uncooked rotini
  • 1 large head of broccoli in florets
  • 2 tablespoons olive oil
  • 1 medium red onion diced
  • 4 cloves garlic, minced
  • 3 tablespoons flour
  • 2 cups milk
  • 1 package (8 oz) cream cheese in cubes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cooked chicken
  • 1 1/2 cups shredded sharp cheddar cheese

How to Make Chicken Broccoli Casserole:

  1. Preheat the oven to 400˚F.
  2. Cook the pasta al dente according to the direction on the packaging.
  3. In the last 2 minutes of cooking the pasta add the broccoli florets to the boiling water with the pasta.
  4. Drain the pasta and the broccoli, place them in the baking dish. Set it aside.
  5. In a medium saucepan over medium-high heat add the olive oil, once hot add the onion and garlic and cook until the onion is softened. About 3 minutes.
  6. Add the flour and stir for 2 minutes.
  7. Add the milk and bring to a boil, reduce heat, and continue stirring, until the mixture is thickened.
  8. Add the cream cheese, salt and pepper and continue cooking until the cream cheese is all melted. About 5 minutes.
  9. Add the cooked chicken to the sauce and stir to combine all the ingredients.
  10. Pour the sauce on top of the pasta in the baking dish and stir to combine everything.
  11. Top with grated cheese.
  12. Place in the oven and cook for 15 minutes. Broil for the last 5 minutes, making sure to watch it so it doesn’t burn.
  13. Remove from the oven and serve warm.

I am making this for the middle of the night dinner. Happens after retiring and being disabled. Wake up and are hungry.

I cooked it in the Ninja Foodi 8 qt. 16 oz Rotini, 1/2 a chicken, opinion powder, 4 cups water for the rotini, chicken on top, has a BBQ rub from the grocery store. Pink Salt, fresh ground pepper, pressure cooker on high for 10 minutes, quick release, added broccoli and cooked on Hi pressure for 5 additional minutes, the quick release took out half a chicken.

Hi saute a little EVOO, whole wheat flour, 2 cups whole, 1/2 cup half and half, sauted until the sauce thickened. Add Parm cheese dry bottle kind, cheddar cheese shredded.

Dinner served.
