To make this dish, I started by heating some olive oil in a large skillet over medium-high heat.
Once the oil was hot I added some slices red and green bell peppers, sliced onions, fajita seasoning mix, salt and pepper to the skillet.
I cooked until the peppers and onions were softened and then removed the skillet from the heat.
Then I placed some shredded chicken in the bottom of a casserole dish and spread it out evenly.
I spooned some salsa over the chicken.
I spooned the peppers and onions over the salsa.
Then I sprinkled some shredded cheddar cheese on top.
I placed the dish in the oven and baked the casserole for twenty minutes.
Then I removed the casserole from the oven and sprinkled some fresh chopped cilantro on top.

- 3 cups shredded chicken
- 1 tablespoon olive oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 2 tablespoons fajita seasoning mix
