To make this casserole, I started by cooking some rotini noodles in a pot of boiling water.

Then I drained the pasta and set it aside.

I melted some butter in a bowl.

Then I added some panko crumbs and parmesan cheese to the bowl.

I stirred the ingredients together well.

I added some butter to the empty pasta pot.

Once the butter was melted, I added some diced onions to the pot.

I cooked until the onions were translucent.

Then I sprinkled some flour over the onions.

I stirred until a paste formed.

I added some Dijon mustard and reserved pasta water to the pot.

I stirred until a smooth mixture formed.

I added some Boursin cheese, salt and pepper to the pot.

I also added some diced ham, grated gouda and heavy cream to the pot.

I stirred well and continued cooking over low heat until the ingredients were well combined.

I removed the pot from the heat and added the cooked rotini.

 

I stirred until the noodles were well coated in sauce.

I poured the mixture into a greased 9 x 13 inch baking dish and spread it out evenly.

I sprinkled the parmesan panko mixture over top.

I placed the dish in the oven and baked the casserole until the topping was golden brown.

Ingredients You’ll Need to Make This Ham and Noodle Casserole:

  • 1 pound dried rotini pasta
  • 4 tablespoons (1/2 stick) unsalted butter
  • ½ cup panko breadcrumbs
  • ½ cup parmesan cheese, grated
  • Kosher salt
  • Freshly ground pepper
  • 1 cup chopped white onion
  • 3 tablespoons all-purpose flour

How to Make Ham and Noodle Casserole:

  1. Preheat oven to 375° F. Liberally grease a 9 x 13” casserole dish. And set aside.
  2. Bring a large pot of water to a boil (large enough to hold 6 quarts of water) and add pasta. Cook for 7 minutes until al dente.
  3. Drain well, reserving one cup of the pasta water and then set aside.
  4. While the pasta is cooking make the parmesan panko topping by melting 2 tablespoons of butter in a small bowl.
  5. Add the panko breadcrumbs and stir in the parmesan cheese. Season with a pinch of salt and pepper and set aside.
  6. Using the same pot the pasta was cooked in, add the remaining butter and allow it to melt.
  7. Add the chopped onions and fry until translucent (about 2 minutes).
  8. Sprinkle 3 tablespoons of the flour over the onions and stir until a paste has formed.
  9. Add the Dijon mustard and reserved pasta water and continue to stir the mixture until it is smooth.
  10. Add the Boursin cheese and season with salt and pepper
  11. Add diced ham, grated cheese, and heavy cream, and cook over low heat until the ingredients are well combined.
  12. Remove the pot from the stove and add cooked pasta, stirring until the pasta is coated in the sauce.
  13. Pour pasta into the prepared casserole dish and spread it out evenly.
  14. Sprinkle the panko parmesan mixture over the top.
  15. Place on the middle rack of the oven and bake for 15-20 minutes or when the topping is golden brown.
  16. Remove from oven and let rest for 5 minutes before garnishing with the chopped parsley.

  • *Pasta Water - Using the reserved pasta water is crucial to get a creamy smooth sauce
  • Avoid buying Gouda or Jarlsberg cheese that is already shredded. The starches in shredded cheese contain (to stop it from clumping together in the store) don’t make for a nice, melted texture. It is best to grate your own. (Grated parmesan cheese is fine)
